Sula Vineyards in collaboration with Paul and Mike Farmers and Fermenters has introduced Dindori Reserve Shiraz dark vegan chocolate bar. It is one of the nation’s finest farms to bar chocolate makers offering a wide array of gourmet chocolates. This alliance is another move for the company to come up with uncommon consumer experiences.

The gourmet chocolate bar is prepared from the premium-quality cocoa beans aged in Dindori Reserve Shiraz wine barrels, muscovado sugar, and pure cocoa butter. It is a strong, extraordinary wine, aged in French oak barrels for 10-12 months. The wine-soaked wooden barrel imparts berries, silky tannins, and sweet spices like flavours to the cocoa beans.

Wine is a very sophisticated product and is not exposed to temperatures over 30 degrees Celsius during its entire transformation journey from grape to glass. Chocolate making on the other hand involves high-temperature processing steps like tempering. It was necessary to strike the accurate balance between achieving sufficient wine flavour intensity and at the same time making sure that the dark chocolate does not become too bitter.

Chaitanya Rathi, COO of Sula Vineyards stated- “This impressive combination of wine flavours with rich cocoa beans needs careful craftsmanship and pinpoint handling to accomplish good sensual intensity. We always attempt to bring novel experiences and are pleased to team up with Paul and Mike. This launch diversifies our basket of creative offerings for patrons.”

“It took a chain of experiments for Sula Vineyards and Paul and Mike to infuse wine notes into dark chocolate. It took more than six months of R&D, tastings, and many events of creativity to ultimately freeze on the process and the recipe. The wonder lies in ageing the cocoa nibs in the award-winning wine barrels at Sula’s cellars and a secret step invented by Paul and Mike – that flawlessly unifies the complexity of wine with the taste of chocolate. And all this is being done without adding any alcohol to the preparation,” Rathi further said.

Vikas Temani, Business Head – Paul and Mike informed- “We are very thrilled to come up with this distinct chocolate with complex flavors of wines. It is a celebration of India’s potential to create and launch exceptional and delectable food and beverage products and we will carry on amazing our patrons with more and more of such flavourful world-class treats.”

The limited-edition dark vegan chocolate is can be purchased for Rs. 350 across the nation.
